Strawberries and cream in a bottle may be a tall order but that’s what we set out to do. To achieve this we handpicked Pinot Noir (90%) and Chardonnay (10%) . Naturally fermenting the juice to preserve the primary flavours.
The wine then spent 10 months in French Oak where it went through a full malolactic fermentation and was hand stirred to develop complexity and texture. To maximise flavour we bottled the wine unfined with a light filtration.
